No Churn Cherry Chocolate Chip Ice Cream

(I like to think of capital letters as enthusiasm not shouting, but maybe that's just me!)
I can't believe it! It feels like I just started this lil' blog, but I guess not!
While posts have been fewer and farther between, I haven't forgotten about you or the blog! I've just been a bit busy. I hope to get back to normal soon, but we'll just have to see if life cooperates or not.
In the meantime, here's to three years of blogging!
I love ice cream so I thought I would celebrate with some!

No Churn Cherry Chocolate Chip Ice Cream 
Ingredients:
3 ¾ cups pitted and chopped cherries
1 Tablespoon Cointreau – or any other liquid
1 (14 ounce) can sweetened condensed milk
2 teaspoon vanilla
2 ¼ cups cold heavy whipping cream
4 ounces chopped chocolate

Directions:
1. Place chopped cherries in the bowl of food processor and process until pureed. Add in Tablespoon of liquid and blend.
2. In a large bowl, whisk together the sweetened condensed milk, vanilla and cherry puree until combined.
3. In the bowl of a stand mixer fitted with whisk attachment, whip cold cream on medium-high until stiff peaks are formed.  Fold whipped cream into cherry mixture until thoroughly combined (this will take awhile). Stir in chocolate.
4. Pour ice cream into a freezer proof container and freeze for at least 6 hours or preferably overnight.
